Observing the best tradizions of our old places we can offer you a typical mediterranean cousine using indigene and genuine products.
Essential component is extra virgin olive oil, produced in the farm. Our oil becomes D.O.P. (D.O.P. means quality mark) for highest feeding values.
On our table you can taste typical flavours of our places that remember sea..farmland...wind. Our typical menu counts among "orecchiette" (pasta made in the farm), puree of broad bean with vegetables, pieces of meat rolled up and cooked in the gravy, several sorts of rolled meat, rolled fish, rolled aubergine, octopussy.The main part of cultivar of Masseria Casamassima is olive oil. The secular threes were planted by Saracens sometimes are millenarian.We have 12 different cultivar that give us an extra virgin olive oil of great quality. The Farm “Masseria Casamassima” is large 55 hectares and has also growings of vegetables, almond trees, pears, figs, carobs.Part of the oils produced are directly sold in the farm, but every years our experts select the best qualities for flavour and property characteristics. Those characteristics are different every year for climatic mutabilities.In 2006 the farm has choised for the clients three different kind of oils:
